- <li>3/4 cup granulated sugar</li>
- <li>1/2 cup light brown sugar</li>
- <li>1 large egg, room temperature</li>
- <li>2 tablespoon vanilla extract or vanilla bean paste</li>
- <li>2 cups gluten free all purpose flour</li>
- <li>2 teaspoons baking soda</li>
- <li>1 teaspoon baking salt</li>
- <li>1 cup Christmas m&m’s</li>

- <p>Wet Ingredients:</p>

- <li>1/2 cup unsalted butter</li>
- <li>1/3 cup dark chocolate chips<span class="Apple-converted-space"> </span></li>
- <li>1/4 cup oil</li>
- <li>1 cup granulated sugar</li>
- <li>1 tablespoon powdered sugar</li>
- <li>1/2 cup + 2 tablespoons light brown sugar</li>
- <li>3 large eggs, room temperature</li>
- <li>1 tablespoon vanilla extract</li>
- <li>Red gel food coloring</li>

- <p>Dry Ingredients:</p>

- <li>3/4 cup gluten free all purpose flour</li>
- <li>3/4 cup unsweetened cocoa powder</li>
- <li>1 teaspoon salt</li>

Steps:

- <li>Prepare the cookie dough batter first.</li>
- <li>Preheat oven to 350F & line a 9x9 baking dish with parchment paper. </li>
- <li>In a large mixing bowl, beat butter & sugars until creamy.</li>
- <li>Add the vanilla & egg to the butter mixture & mix again until creamy.</li>
- <li>Add the dry ingredients & mix until just combined</li>
- <li>Fold in the m&m’s & set cookie dough aside while you make the brownie batter.</li>
- <li>In a microwaveable bowl, heat the butter, dark chocolate chips, & oil for 30 seconds increments, stirring in between, until smooth.</li>
- <li>In a large mixing bowl, beat the sugars & eggs for at least 6 minutes on medium high speed, creating a thick, creamy texture that doubles in size. You want the sugars to mostly dissolve.</li>
- <li>Add the chocolate mixture, vanilla, & red gel coloring (start off with 1 or 2 drops & continue to get your desired color) to the egg mixture until combined.</li>
- <li>Sift the dry ingredients, then fold them gently together until mostly no flour streaks remain. Be careful not to over mix.</li>
- <li>Pour the brownie batter into the prepared baking dish, followed by taking dollops of the cookie dough batter and placing it in random spots.</li>
- <li>Bake for 30-35 minutes or until center of brookies reach a temperature of at least 165F. Let cool for at least 40 minutes before serving. </li>
