<li>1 cup unsalted butter, melted & slightly cooled</li>
<li>1 cup granulated sugar</li>
<li>1 teaspoon vanilla extract</li>
<li>2 eggs</li>
<li>1 + 3/4 cup gluten free 1:1 flour OR 2 cups regular all purpose flour</li>
<li>1 teaspoon baking soda</li>
<li>3 ripe bananas (1 cup) mashed</li>
<li>1/2 cup semi sweet chocolate chips + more for topping the loaf</li>

Steps:

<li>Preheat oven to 350F & line a 9x5 inch loaf pan with parchment paper.</li>
<li>Melt the butter in a small bowl in the microwave for 30 second increments until melted.<span class="Apple-converted-space"> </span>Let it cool slightly 5 minutes.</li>
<li>In a large bowl whisk the melted butter, sugar & vanilla.</li>
<li>Add the eggs, whisking until fluffy.</li>
<li>Add the mashed banana to the bowl & mix using a spatula.</li>
<li>Whisk the baking soda & flour in a separate bowl, then fold it into the banana mixture until just combined.<span class="Apple-converted-space"> </span>Do not overmix!</li>
<li>Fold in the chocolate chips.</li>
<li>Pour the batter into the prepared loaf pan, & top with more chocolate chips.</li>
<li>Bake for at least 60-65 minutes or until toothpick comes out clean from the center.</li>
<li>Let rest & cool in the loaf pan for at least 30 minutes before serving.</li>

<p>Store in ziplock bag or plastic wrap for up to 3 days.</p>
