- <p>FRENCH FRIES:</p>

- <li>4 russet potatoes</li>
- <li>1/4 cup corn syrup</li>
- <li>1 +1/2 tablespoons kosher salt</li>
- <li>2 tablespoons white vinegar</li>
- <li>6 cups cold water</li>
- <li>Vegetable oil<span class="Apple-converted-space"> </span></li>
- <li>1/2 cup vegetable shortening</li>
- <li>Salt for seasoning</li>
- </ul>
- <p>HAMBURGER BUNS:</p>
- <ul>
- <li>*a candy thermometer is recommended to get the right water temperature</li>
- <li>1 cup warm water + 1 tablespoon (110F)</li>
- <li>2 tablespoons active dry yeast</li>
- <li>1/3 cup vegetable oil</li>
- <li>1/4 cup sugar</li>
- <li>1 teaspoon salt</li>
- <li>1 egg, beaten</li>
- <li>3 cups all purpose flour</li>
- <li>1 egg yolk (for egg washing the buns)</li>
- <li>Sesame seeds for topping the buns</li>
- </ul>

- <p>BIG MAC SAUCE & BIG MAC</p>
- <ul>
- <li>1/2 cup mayonnaise</li>
- <li>4 tablespoons pickled relish, drained</li>
- <li>3-4 tablespoons ketchup<span class="Apple-converted-space"> </span></li>
- <li>1 teaspoon granulated sugar</li>
- <li>1 teaspoon white vinegar</li>
- <li>2 lbs of 80/20% fat ground beef</li>
- <li>Salt to season beef</li>
- <li>2 tablespoons unsalted butter for frying the patties<span class="Apple-converted-space"> </span></li>
- <li>1 teaspoon vegetable oil for frying the patties</li>
- <li>1/4 cup yellow mustard, spread on patties before frying</li>
- <li>American cheese slices for patties</li>
- </ul>
- <p>TOPPINGS:</p>
- <ul>
- <li>1 white onion, chopped<span class="Apple-converted-space"> </span></li>
- <li>Dill pickle chips</li>
- <li>Shredded iceberg lettuce (or whichever you prefer)<span class="Apple-converted-space"> </span></li>
- </ul>
Steps:
- <p>FRENCH FRIES:</p>
- <ul>
- <li>Start process by prepping the French fries, burger patties, & sides.<span class="Apple-converted-space"> </span>Peel the potatoes & cup them into 1/4 inch thick strips using French fry cutter or knife & place cut potatoes in a strainer with running cold water, rinsing them until water is clear to remove excess starch.</li>
- <li>In a large bowl combine ice water, corn syrup, white vinegar, & kosher salt & stir.</li>
- <li>Add the cut potatoes to the bowl & refrigerate for at least 2 hours or overnight.</li>
- <li>While the potatoes are soaking, start making your hamburger buns. (Skip hamburger buns steps & start the hamburger patties & sides process about 20 minutes before the end of 2 hours, if you don’t plan to make the buns from scratch).</li>
- </ul>
- <p>HAMBURGER BUNS:</p>
- <ul>
- <li>Preheat oven to 425F.<span class="Apple-converted-space"> </span>Add the warm water (about 110F),<span class="Apple-converted-space"> </span>yeast, oil, & sugar to a large bowl & let stand for 5 minutes until foamy.</li>
- <li>Whisk in the egg to the yeast mixture, followed by slowly mixing in the flour & salt.</li>
- <li>Kneading by hand or using a stand mixer with the dough hook attachment, knead the dough for 3-5 minutes until the dough is smooth & starts to form a large ball.<span class="Apple-converted-space"> </span>Do not over knead.</li>
- <li>Take the dough out onto a lightly floured surface & cut into 8 equal parts.</li>
- <li>Roll each part into smooth balls, & place the balls onto a baking sheet with parchment paper spread out evenly about 3 inches apart.<span class="Apple-converted-space"> </span>Cover with a towel & let rest for 10 minutes.</li>
- <li>After the 10 minutes, brush the dough balls with egg wash, & sprinkle with sesame seeds.</li>
- <li>Bake until golden brown, about 10 minutes.<span class="Apple-converted-space"> </span>Set aside & start to prep the hamburger patties & sides.</li>
- </ul>
- <p>HAMBURGER PATTIES & SIDES:</p>
- <ul>
- <li>Prep the hamburger patties by gently forming large, thin patties about 5 inches long across.<span class="Apple-converted-space"> </span>Let them rest on plate or parchment paper until ready.</li>
- <li>Chop the white onion & set aside</li>
- <li>Prepare the Big Mac sauce by combining all ingredients in a medium bowl.<span class="Apple-converted-space"> </span>Set aside.</li>
- </ul>
- <p>FRENCH FRIES:</p>
- <ul>
- <li>At the end of 2 hours, drain the potatoes & rinse them well, then pat them dry with paper towels until completely dry.</li>
- <li>Heat vegetable oil in a large skillet or heavy pot to 300F.</li>
- <li>Fry small batches of the potatoes for 5 minutes until floppy (but not brown).<span class="Apple-converted-space"> </span>Let the potatoes drain on a white rack or paper towels for 10 minutes.</li>
- <li>Increase the oil temperature to 400F.<span class="Apple-converted-space"> </span>Add the vegetable shortening to the oil until melted.</li>
- <li>In small batches again, refry the potatoes until crispy & golden (about 5 minutes).</li>
- <li>Once fried, transfer the French fries to a wire rack.<span class="Apple-converted-space"> </span>Toss with salt when ready to serve.<span class="Apple-converted-space"> </span></li>
- </ul>
- <p>HAMBURGER FRYING & ASSEMBLING:</p>
- <ul>
- <li>In a large skillet heat the butter & vegetable oil over medium high heat. <span class="Apple-converted-space"> </span></li>
- <li>Brush each side of the hamburger patties with yellow mustard, then season with salt & pepper to taste. <span class="Apple-converted-space"> </span></li>
- <li>Place the patties in the frying pan & fry for about 2-3 minutes on the first side, followed by flipping the patties & topping them with American cheese slices & frying for another 2-3 minutes. Careful not to overcook. <span class="Apple-converted-space"> </span></li>
- <li>Remove patties from heat & assemble your Big Mac’s.</li>
- <li>Start off with the bottom bun layer, then move upwards spreading 1-2 tablespoons of Big Mac sauce, then chopped onion, lettuce, then a hamburger patty.</li>
- <li>Place another bottom patty on top of the hamburger patty, & repeat process from previous step, but finish off topping the 2nd patty with more Big Mac sauce & a few pickle chips, then the top hamburger bun.</li>
