Ingredients:
- <p>CHICKEN MARINADE:</p>
- <ul>
- <li>3-4 boneless chicken breasts, cut into bite sized chunks</li>
- <li>1 tablespoon sesame oil</li>
- <li>2 tablespooons soy sauce (GF soy sauce if needed)</li>
- <li>1 tablespoon corn starch</li>
- <li>1 teaspoon baking soda</li>
- <li>1 tablespoon rice vinegar</li>
- </ul>
- <p>STICKY SAUCE:</p>
- <ul>
- <li>4 tablespoons low sodium soy sauce (GF if needed)</li>
- <li>1/3 cup chicken broth</li>
- <li>4 tablespoons honey</li>
- <li>1 tablespoon rice vinegar</li>
- <li>2 teaspoons sriracha<span class="Apple-converted-space"> </span></li>
- <li>1 tabelspoon cornstarch</li>
- <li>Sesame seeds<span class="Apple-converted-space"> </span></li>
- </ul>
- <p>STIR FRY:</p>
- <ul>
- <li>1 cup unsalted cashews</li>
- <li>3 tablespoons vegetable oil</li>
- <li>1 red pepper, chopped<span class="Apple-converted-space"> </span></li>
- <li>1 yellow pepper, chopped</li>
- <li>1 small purple onion, chopped</li>
- <li>1 tablespoon grated ginger</li>
- <li>3-4 tablespoons minced garlic</li>
- </ul>
Steps:
- <ol>
- <li>Cut the chicken breasts into bite sized chunks & place in a medium bowl.<span class="Apple-converted-space"> </span>Dice the bell peppers & onion & place in a separate bowl.</li>
- <li>Whisk the marinade ingredients together & pour into the chicken bowl, massage the chicken with your hands & let marinade at room temperature for 20 minutes.</li>
- <li>Whisk the sticky sauce ingredients in a medium bowl & set aside.</li>
- <li>Toast the cashews in a medium sauce pan over medium high heat, stirring them frequently to make sure they do not burn.<span class="Apple-converted-space"> </span>( a few marks are fine!). Toast them for a few minutes then set aside in small bowl.</li>
- <li>In a large sauce pan over medium high heat, heat the 2 tablespoons of vegetable oil, then add the chicken pieces.</li>
- <li>Let the chicken pieces sit without stirring for 3 minutes, then stir them to get nice sear marks.</li>
- <li>Cook the chicken for a few minutes more until just cooked, remove from heat & place in large bowl.</li>
- <li>With the same pan uncleaned, add another tablespoon of vegetable oil & stirfry the vegetables on medium high heat for 4-5 minutes.</li>
- <li>Add the chicken back to the pan, along with the cashews.</li>
- <li>Add the sauce all over the chicken cashew & stir to let thicken up a little until sticky & delicious.</li>
- <li>Top with sesame seeds & green onion.</li>
