These s’mores cookie bars are so gooey from the toasted marshmallows with crisp edges from the graham crackers, and soft cookie centers. They’re delicious and easy to put together when you’re craving a sweet treat!

S’mores cookie bars

Ingredients:

- <li>12 tablespoons unsalted butter, melted</li>
- <li>3/4 cup light brown sugar</li>
- <li>1/3 cup granulated sugar</li>
- <li>1 egg + 1 yolk, room temperature</li>
- <li>2 teaspoons vanilla extract</li>
- <li>2 cups gluten free flour OR 1 + 1/2 cups regular all purpose flour</li>
- <li>1/2 teaspoon salt</li>
- <li>2 tablespoons cornstarch</li>
- <li>1/2 cup semi sweet chocolate chips + more for topping the bars</li>
- <li>Mini marshmallows to sprinkle over top of cookie bars</li>
- <li>Graham crackers for the cookie bar bottoms (gluten free if needed)</li>

Steps:
- <ol>
- <li>Preheat oven to 350F & line a 9x9 baking pan with parchment paper.<span class="Apple-converted-space"> </span>Set aside.</li>
- <li>Whisk the dry ingredients together in a large bowl (flour, salt, cornstarch) & set aside.</li>
- <li>In another large bowl, using an electric mixer mix the sugars & melted butter until just combined.</li>
- <li>Add the egg + egg yolk & vanilla extract to the sugar mixture, & mix again until combined.</li>
- <li>Add the flour to the wet mixture & mix with electric mixer until JUST combined. <span class="Apple-converted-space"> </span></li>
- <li>Fold in the chocolate chips<span class="Apple-converted-space"> </span></li>
- <li>In the prepared pan with parchment paper, line the entire bottom with graham crackers in a single layer.</li>
- <li>Carefully place dollops of the cookie dough on top of the graham crackers and spread it out gently to form the cookie dough layer.</li>
- <li>Top with extra chocolate chips if desired & bake at 350F for 25 minutes or until toothpick comes out mostly clean.</li>
- <li>Take the cookie bars out of the oven & sprinkle a generous amount of mini marshmallows all over the top.<span class="Apple-converted-space"> </span>Top with more chocolate chips!</li>
- <li>Put oven to high broil, and carefully put the cookie bars back in the oven.<span class="Apple-converted-space"> </span>Watch the bars as it will only take about a minute for the marshmallows to start to brown, and quickly take the s’mores cookie bars back out of the oven once toasty.<span class="Apple-converted-space"> </span>Turn oven off.<span class="Apple-converted-space"> </span>Be careful not to burn!</li>
- <li>Let the s’mores cookie bars sit in the pan, on the counter for at least 30 minutes before serving (to set). <span class="Apple-converted-space"> </span></li>
